Braai Lobster and Potato Salad is a delicious seafood dish perfect for a summer BBQ. The combination of the succulent grilled lobster and the creamy potato salad make for a delightful meal.
- 2 live lobsters, about 1 1/2 pounds each
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and cubed
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 teaspoon sugar
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Preheat braai or grill to medium heat.
- In a small bowl, combine olive oil, thyme, and garlic. Liberally brush both lobsters with the mixture. Grill lobsters for 10-12 minutes until shells turn bright red and meat is cooked through.
- Meanwhile, bring a pot of salted water to a boil. Add potatoes and cook until tender, about 10 minutes. Drain potatoes and place in a bowl.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, sugar, and lemon juice. Add to potatoes and stir to combine.
- Chop cooked lobster into bite-sized pieces. Add to potato salad and stir to combine.
- Stir in parsley and season with salt and pepper, to taste.
- Serve warm or chilled.
