Easter Hot cross bun braai broodjie


Ingredients:

  • 4 hot cross buns
  • 8 chocolate marshmallow Easter eggs
  • 4 tbsp. Nutella or chocolate spread
  • 4 tbsp. butter, softened

Instructions:

  1. Slice the hot cross buns in half and spread butter on the cut sides.
  2. Spread Nutella or chocolate spread on one half of the bun, then place 2 chocolate marshmallow Easter eggs on top.
  3. Cover with the other half of the bun.
  4. Repeat for the remaining buns.
  5. Heat up a braai (barbecue) or grill pan to medium heat.
  6. Grill the broodjies for a few minutes on each side, until the chocolate and marshmallow eggs are melted and the buns are toasted.
  7. Remove from the heat and let cool for a minute or two before serving.

Chutney Bean Braai Salad

Ingredients:

  • 2 cans of mixed beans, drained and rinsed
  • 1 red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 carrots, grated
  • 1 cup of Mrs Balls Chutney
  • 1/4 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions:

  1. In a large bowl, mix together the mixed beans, chopped red onion, red and green bell pepper, and grated carrots.
  2. In a separate bowl, whisk together the Mrs Balls Chutney, olive oil, apple cider vinegar, salt, and pepper to make the dressing.
  3. Pour the dressing over the bean mixture and toss until everything is coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Before serving, give the salad a good stir and sprinkle with fresh parsley, if desired.

Caprese braai broodjie

Ingredients:

  • 4 ciabatta rolls or bread
  • 4 large ripe tomatoes, sliced
  • 250g fresh mozzarella, sliced
  • 1/2 cup of fresh basil leaves
  • Balsamic glaze
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your braai (grill) to medium-high heat.
  2. Slice the ciabatta rolls in half and brush them with olive oil.
  3. Place the ciabatta rolls on the braai, cut side down, and cook for 2-3 minutes until they’re lightly toasted.
  4. Place a few slices of tomato on the bottom half of each ciabatta roll.
  5. Top the tomato slices with a few slices of fresh mozzarella.
  6. Add a few fresh basil leaves on top of the mozzarella.
  7. Drizzle some balsamic glaze on top of the basil leaves.
  8. Season with salt and pepper to taste.
  9. Close the broodjie by placing the top half of each ciabatta roll on top of the filling.
  10. Wrap the broodjie tightly in foil and place it on the braai.
  11. Grill the broodjie for 5-7 minutes, turning once, until the bread is toasted and the cheese has melted.
  12. Remove the broodjie from the braai, unwrap it, and serve hot.

Pulled Pork Braai Broodjie

  • 500g pulled pork
  • 4 soft rolls (brootjies)
  • 1 cup of BBQ sauce (steers is best)
  • 1 red onion, thinly sliced

  • 4 sweet potatoes, peeled and sliced into rounds

Ingredients:

  • 4 slices of thick-cut bacon
  • 4 large eggs
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • 4 slices of focaccia bread

  • 4 bread rolls
  • 2 cans of tuna, drained

  • 4 slices of bread
  • 1/2 cup cream cheese, softened
  • 1/2 cup biltong, sliced or shredded

  • 1 large red pepper, sliced
  • 1 large yellow pepper, sliced
  • 1 large red onion, sliced
  • 1 medium zucchini, sliced
  • 1 medium eggplant, sliced

  2. In a large bowl, combine the sliced red and yellow peppers, red onion, zucchini, and eggplant.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried thyme, salt, and pepper.

  5. Place the vegetables on a baking sheet or roasting pan and roast in the oven at 400°F (200°C) for 20-25 minutes or until tender and lightly browned.
