Ingredients:
– 2 pounds large prawns, peeled and deveined
– 1/4 cup coconut oil
– 2 tablespoons curry powder
– 1 teaspoon ground ginger
– 1/4 teaspoon cayenne pepper
– 2 cloves garlic, minced
– 2 tablespoons fresh lime juice
– 2 tablespoons chopped fresh cilantro
– Salt and pepper, to taste
Directions:
1. Preheat your braai grill to medium-high heat (about 200°C).
2. In a large bowl, combine the prawns, coconut oil, curry powder, ginger, cayenne pepper, garlic, lime juice, cilantro, salt, and pepper until well blended.
3. Place the prawns on the preheated grill and cook for 2-3 minutes per side, or until the prawns are cooked through and lightly charred.
4. Remove the prawns from the grill and transfer to a plate.
5. In a small saucepan, heat the remaining coconut oil over medium-high heat. Add the curry powder, ginger, and cayenne pepper and stir until fragrant.
6. Add the garlic and cook for 1 minute.
