Curried Braai Potato Salad
This Curried Braai Potato Salad is a unique take on the classic potato salad. A medley of potatoes, carrots, peas, and spices are combined for a flavorful twist on the traditional dish. The curry spices give the salad an exotic flavor that is sure to be a hit at any gathering.
Ingredients:
- 2 pounds small potatoes, peeled and cubed
- 2 carrots, peeled and diced
- 1 cup frozen green peas
- 1/4 cup mayonnaise
- 2 tablespoons yellow curry powder
- 2 teaspoons garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Directions:
- Bring a large pot of salted water to a boil. Add the potatoes and carrots and cook for 15-20 minutes, or until tender. Drain and set aside.
- In a medium bowl, mix together the mayonnaise, curry powder, garlic powder, cumin, coriander, paprika, salt, and pepper.
- Add the potatoes, carrots, and peas to the bowl and toss to combine.
- Refrigerate for at least 2 hours before serving.
- When ready to serve, adjust seasoning to taste with salt and pepper.
- Serve chilled or at room temperature.
