Apple and Walnut Braai Potato Salad
This delicious potato salad is perfect for summer barbeques. It features crunchy apples and walnuts, adding a sweet and nutty flavor.
- 6 medium potatoes, peeled and diced
- 2 red apples, cored and diced
- 1/2 cup walnuts, chopped
- 1/2 cup celery, diced
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Preheat a grill to medium-high heat.
- In a large pot of salted boiling water, cook the potatoes for 10 minutes or until tender. Drain and set aside.
- In a large bowl, combine the diced apples, walnuts, celery, mayonnaise, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Add the potatoes to the bowl and mix until everything is evenly coated.
- Place the potato salad in a large greased foil packet.
- Place the foil packet on the preheated grill and cook for 10 minutes, flipping the packet halfway through.
- Remove the foil packet from the grill and let cool for 5 minutes before serving.
