  • 3 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cut into cubes
  • 1 cup cold water
  • 3 cups vegetable oil, for frying
  • 1 cup white sugar
  • 1/2 cup water
  • 1/4 cup fresh ginger, grated

  1. In a large bowl, whisk together the flour, cinnamon, ground ginger, baking powder, sugar, and salt.
  2. Add the butter to the dry ingredients and blend with a pastry cutter until the mixture resembles coarse crumbs.
  3. Slowly add the cold water and mix together until a dough ball forms.
  4. On a lightly floured surface, roll the dough out to 1/2 inch thickness.
  5. Cut the dough into strips 2 inches wide and 6 inches long.
  6. Heat the oil in a deep pot over medium-high heat. Fry the strips in the oil until golden brown, about 2 minutes each side.
  7. Remove the fried strips from the oil and place them on a plate lined with paper towels to drain.
  8. In a medium saucepan, combine the sugar, water, and grated ginger. Bring to a boil and simmer for 5 minutes. Remove from heat and let cool.
