Crispy Barbecue Coleslaw with Red Cabbage and Carrots
This delicious, crunchy coleslaw is the perfect summer side dish! Red cabbage and carrots are shredded then tossed with a zesty, smoky barbecue sauce and crispy bacon pieces for a flavorful and colorful dish. It’s a great way to get your veggies in and enjoy all the flavors of summer.
Ingredients:
- 2 cups red cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup barbecue sauce
- 1/4 cup bacon, cooked and crumbled
- 3 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Directions:
- In a large bowl, combine the red cabbage and carrots.
- In a separate bowl, whisk together the barbecue sauce, mayonnaise, apple cider vinegar, honey, and Dijon mustard until combined.
- Pour the sauce over the cabbage and carrots and toss to coat.
- Stir in the bacon pieces.
