Crispy Barbecue Coleslaw with Red Cabbage and Carrots

This delicious, crunchy coleslaw is the perfect summer side dish! Red cabbage and carrots are shredded then tossed with a zesty, smoky barbecue sauce and crispy bacon pieces for a flavorful and colorful dish. It’s a great way to get your veggies in and enjoy all the flavors of summer.


  • 2 cups red cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup barbecue sauce
  • 1/4 cup bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste


  1. In a large bowl, combine the red cabbage and carrots.
  2. In a separate bowl, whisk together the barbecue sauce, mayonnaise, apple cider vinegar, honey, and Dijon mustard until combined.
  3. Pour the sauce over the cabbage and carrots and toss to coat.
  4. Stir in the bacon pieces.
  5. Season with salt and pepper to taste.
  6. Refrigerate for at least 30 minutes before serving.
  7. Garnish with additional bacon pieces, if desired.
