Caramel-Dipped Koeksisters Recipe
This South African dessert is a treat for all senses. These Caramel-Dipped Koeksisters are sweet, sticky, and crunchy all in one. With a delicious caramel coating, these koeksisters are sure to be a hit with all!
Ingredients:
- 2 cups white sugar
- 1 cup water
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 tablespoons butter
- 4 cups all-purpose flour
- 2 tablespoons baking powder
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 2/3 cup milk
- 1/4 cup canola oil
- 1/2 cup light corn syrup
- 2 cups vegetable oil, for frying
- 1 cup caramel sauce
Directions:
- In a medium saucepan, combine the sugar, water, ginger, cinnamon, nutmeg, and butter over medium heat. Cook, stirring constantly, until the sugar is dissolved and the mixture comes to a boil. Remove from the heat and let cool.
- In a large bowl, combine the flour, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, oil, and corn syrup. Slowly stir the wet ingredients into the dry ingredients until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes. Roll the dough out to 1/4-inch thickness and cut it into strips about 1 inch wide. Twist the strips into knots and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Fry the koeksisters in batches until they are golden brown and cooked through, about 3 minutes per side. Drain on a paper towel-lined plate.
- In a medium bowl, combine the caramel sauce and cooled syrup. Dip each koeksister in the caramel mixture, coating it completely. Place on a wire rack to cool and set.
- Serve the koeksisters warm, or store in an airtight container for up to one week.
