Nothing says fall more than a delicious Pumpkin Spice Koeksisters. This sweet treat is a perfect combination of pumpkin spice and crunchy syrup-coated dough. It’s the ideal dessert or snack to enjoy with a cup of coffee or tea.
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin spice
- 1/2 cup butter
- 3/4 cup milk
- Oil for frying
- 2 cups sugar
- 1/2 cup water
- 2 tablespoons lemon juice
Directions:
- In a large bowl, combine the flour, baking powder, baking soda, salt, and pumpkin spice.
- Add the butter and mix until crumbly. Slowly add the milk and mix until a dough forms.
- Divide the dough into 8 equal pieces and roll each piece into a rope about 1/2-inch thick.
- Join the ends of the rope together in a circle, forming a Koeksister shape. Repeat with the remaining dough.
- Heat oil in a deep-fryer or deep skillet to 375 degrees F.
- Fry the Koeksisters in the hot oil, a few at a time, until golden brown and cooked through, about 3 minutes. Remove from the oil and drain on paper towels.
- In a medium saucepan, combine the sugar, water, and lemon juice. Bring to a boil and reduce heat to a simmer.
- Dip each Koeksister in the syrup and let cool on a wire rack. Enjoy!
