1-Pot Pumpkin Turkey Chili

Ingredients:

– 1 pound lean ground turkey
– 1 large onion, diced
– 2 cloves garlic, minced
– 1 (15 ounce) can pumpkin puree
– 1 (14.5 ounce) can diced tomatoes
– 1 (15 ounce) can black beans, drained and rinsed
– 1 (4 ounce) can diced green chiles
– 1 tablespoon chili powder
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cinnamon
– 1/2 teaspoon garlic powder
– 1/4 teaspoon ground nutmeg
– Salt and pepper, to taste
– 2 cups low-sodium chicken broth

Instructions:

1. In a large pot over medium heat, cook the ground turkey until it’s no longer pink.

2. Add the diced onion and cook for 4-5 minutes until softened.

3. Add the garlic and cook until fragrant, about 1 minute.

4. Stir in the pumpkin puree, diced tomatoes, black beans, green chiles, chili powder, cumin, smoked paprika, cinnamon, garlic powder, nutmeg, salt, and pepper.

5. Pour in the chicken broth and bring the mixture to a boil.

6. Reduce the heat to low and simmer for 15-20 minutes until the chili is thick and flavorful.
