Ingredients:
- 1 whole Snoek fish
- 4-6 ripe apricots, pitted and sliced
- 2 tablespoons apricot jam
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and black pepper, to taste
- Fresh coriander leaves, for garnish
Directions:
- Prepare the Snoek fish by cleaning and scaling it. Make diagonal cuts on both sides of the fish to allow the flavors to penetrate.
- In a small bowl, mix together the apricot jam, olive oil, lemon juice, minced garlic, paprika, cumin, coriander, salt, and black pepper to create a marinade.
- Place the Snoek fish in a large dish and pour the marinade over it, ensuring it coats both sides. Allow it to marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Preheat your braai (barbecue) to medium-high heat.
- Remove the fish from the marinade and place it on a braai grid or a fish grilling basket. Keep the marinade aside for basting.
- Grill the Snoek fish over the medium-high heat for about 6-8 minutes per side, or until the fish is cooked through and has a golden-brown color.
- While grilling, baste the fish with the reserved marinade to keep it moist and add extra flavor.
