– 4 pounds short ribs
– 1/4 cup olive oil
– 2 tablespoons chili powder
– 2 cloves minced garlic
– 2 tablespoons lime juice
– 1 teaspoon salt
– 1 teaspoon ground black pepper


1. Preheat the grill to medium-high heat (around 200°C).
2. Place short ribs into a shallow dish and cover with olive oil.
3. Sprinkle chili powder, garlic, lime juice, salt, and pepper over the ribs and mix with your hands until the ribs are evenly coated.
4. Place the ribs onto the preheated grill and cook for 10 minutes per side.
5. Reduce heat to low (around 150°C) and cover the grill. Cook for an additional 15 minutes per side, flipping halfway through.
6. Remove the ribs from the grill and let them rest for 10 minutes.
