  • 1 cup vegan butter
  • 1 1/2 cups all-purpose flour
  • 1/2 cup icing sugar
  • 1/4 teaspoon salt
  • 1/2 cup plant-based milk
  • 1/2 cup cornstarch
  • 3/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves


  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with vegan butter.
  2. In a medium bowl, mix together the vegan butter, flour, icing sugar, and salt until it resembles coarse crumbs.
  3. Press the mixture evenly into the prepared pie dish.
  4. Bake for 15 minutes, or until golden brown.
  5. In a large saucepan, whisk together the plant-based milk, cornstarch, coconut sugar, vanilla extract, cinnamon, nutmeg, ginger, cardamom, and cloves until smooth.
  6. Bring the mixture to a boil over medium-high heat, stirring constantly.
  7. Reduce heat to low and continue to cook for 3-4 minutes, stirring constantly, until the mixture is thick and creamy.
  8. Pour the mixture into the prepared crust and let cool for at least 1 hour before serving.
