Smokey Grilled Chicken Wing Braai Recipe

Ingredients:

WINGS

  • 1 ½ kg chicken wings (wing flats, drumettes, and tips separated; tips discarded)
  • 2 teaspoons kosher salt
  • ¼ teaspoon black pepper
  • Canola oil, for grill

LEMON-PEPPER SAUCE

  • 2 tablespoons olive oil or unsalted butter
  • 1 ½ tablespoons minced garlic (about 3 large garlic cloves)
  • ½ cup prepared lemon curd
  • 3 tablespoons water
  • 2 teaspoons black pepper
  • 1 tablespoon fresh lemon juice (from 1 lemon)

Directions

  1. Prepare the Wings: Preheat a charcoal or gas grill to medium (200°c to 250°c). Toss wings with salt and pepper in a large bowl. Lightly coat grates with canola oil.
  2. Grill, covered, until charred and a thermometer inserted into thickest part of wing registers 90°c, 4 to 5 minutes per side. Transfer to a large bowl.
  3. Prepare the Sauce: While wings cook, heat oil or butter in a small saucepan over medium.
  4. Add garlic; cook, stirring constantly, until softened and fragrant, about 1 minute. Add lemon curd, water, and pepper; stir to combine. Bring to a boil over medium, and cook, stirring occasionally, until reduced slightly, 2 to 3 minutes. Remove from heat; stir in lemon juice.
  5. Pour Sauce over Wings; toss gently to coat. Serve immediately.

Ingredients:

  • 1 to 3 kg chicken wings
  • 1 cup maple syrup
  • ⅔ cup chili sauce
  • ½ cup onion, finely chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • ¼ teaspoon red pepper flakes

Directions

  1. Place wings in a large plastic zipping bag; set aside. Combine the remaining ingredients. Reserve one cup for basting; refrigerate until ready to use.
  2. Pour remaining marinade over wings, turning to coat. Seal bag; refrigerate for 4 hours, turning occasionally. Drain and discard marinade. Place wings in a lightly greased 13″x9″ baking pan.
  3. Bake, uncovered, at 375 degrees for 30 to 40 minutes, basting with reserved marinade, until golden and juices run clear when pierced.

Ingredients

  • 1/2 kg. shrimp
  • 2 tbsp. olive oil
  • 1 tsp. kosher salt
  • 1 tsp. cayenne pepper
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. oregano
  • 2 lemons, sliced thinly crosswise

Directions

  1. Preheat braai grill to medium-high.
  2. Make Cajun spice mix. Combine salt, cayenne, paprika, garlic powder, onion powder, and oregano in a small bowl.
  3. Stir with a fork until evenly combined.
  4. In a medium bowl, toss prawns in olive oil.
  5. Add spice mix and toss prawns until its evenly coated.
  6. Thread prawns and lemon onto metal skewers (or wooden skewers that have been soaked for 20 minutes).
  7. Grill skewers until prawns are opaque and lemon is charred, about 4-5 minutes total, flipping once halfway.

Ingredients

  • 1kg lb. shrimp, peeled and deveined
  • 3 tbsp. olive oil, divided
  • 1/3 c. sweet chili sauce
  • 1/4 c. soy sauce
  • 1/4 c. Captain Morgan Spiced Rum
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1/2 tsp. crushed red pepper flakes
  • 1 green onion, thinly sliced, for garnish

Directions

  1. Place Prawn in a large bowl. In a medium bowl, whisk together 2 tablespoons of olive oil, sweet chili sauce, soy sauce, rum, garlic, lime juice, and red pepper flakes.
  2. Add 3/4 of the marinade to the bowl of Prawns and let marinate in the refrigerator for 15 to 30 minutes.
  3. Heat up you braai and grill Prawns and cook on one side until golden, about 2 minutes.
  4. Put the grilled prawns in a pan using tongs and add the marinade, flip prawns, then brush with remaining marinade. Cook 1 to 2 minutes more.
  5. Garnish with green onions and serve immediately.

  3. Whisk until combined and brush all over skewers.

Ingredients

  • 1/2 kg large Prawns, peeled and deveined
  • 2 cloves garlic, minced
  • 2 smoked andouille sausages, thinly sliced
  • 2 ears of corn, each cut crosswise into 4 pieces
  • 1 lb. red bliss potatoes, chopped into 1-in pieces
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. braai spice seasoning
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. freshly chopped parsley
  • 1 lemon, sliced into thin wedges
  • 4 tbsp. butter

Directions

  1. Preheat grill over high heat, or preheat oven to 225°. Cut 4 sheets of foil about 12 inches long. Divide shrimp, garlic, sausage, corn, and potatoes evenly over the foil sheets. Drizzle with oil, then add braai seasoning and season to taste with salt and pepper. Toss gently to combine. Top each mixture with parsley, lemon and a tablespoon of butter each.
  2. Fold foil packets crosswise over the shrimp boil mixture to completely cover the food. Roll top and bottom edges to seal them closed.
  3. Place foil packets on braai and cook until just cooked through, about 15 to 20 minutes (or transfer to oven and bake for 20 minutes).

  • 1/4 c. extra-virgin olive oil
  • 1/4 c. lime juice
  • 4 garlic cloves, minced
  • 3 tbsp. honey
  • 2 tbsp. low-sodium soy sauce
  • 1 tbsp. chili garlic sauce or Sriracha
  • 2 lb. shrimp, peeled and deveined
  • 1/4 c. freshly chopped cilantro, for garnish
  • Lime wedges, for serving

Directions

  1. If using wooden skewers, soak in water for 30 minutes.
  2. In a medium bowl, whisk together olive oil, lime juice, garlic, honey, soy sauce, and chili sauce. Reserve 1/4 cup marinade for brushing onto prawns while grilling.
  3. In a large bowl, toss prawns with the remaining marinade. Preheat grill or grill pan and thread prawn onto skewers.
  4. Grill prawns until pink and opaque, about 3 minutes per side, brushing with reserved 1/4 cup marinade before and after each flip.
  5. Garnish with cilantro and serve hot with lime wedges.

Ingredients

  • 3 medium cucumbers sliced thin (about 20 ounces)
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons sesame oil

Ingredients

  • Three heads of romaine lettuce
  • Small bunch of radishes
  • Cup of blueberries
  • 1/2 cup raspberries
  • As much goat cheese as you see
  • 1/2 cup of roasted walnuts

Dressing

  • 2 cups halved fresh strawberries
  • 1/3 cup orange juice
  • 1/4 red onion
  • 1/4 teaspoon salt
  • 1 1/2 tablespoons honey 
  • 1/3 cup olive oil
  • 1 tablespoon poppy seeds

Directions

  • Toss all of the salad ingredients.
  • Whisk together the olive oil, lemon juice, sugar, salt, and mustard until the sugar is completely dissolved. Taste and add more lemon until it has enough of a lemon flavor for you. Add more honey if it becomes overwhelmingly acidic.
  • Stir poppy seeds into the dressing.
  • Serve salad dressing on the side and allow people to dress their salad to taste.

Dressing

  • Add the strawberries, orange juice, onion, honey and salt to a blender or food processor. Blend until well combined.
  • Slowly blend in the olive oil until just combined. Taste and add more salt or honey as desired.
  • Pour into a mason jar, add the poppy seeds, cover and shake to combine.
  • Store in the refrigerator and use within one week of making.
