Tangy Lemon and Herb Lamb Braai

Ingredients

  • 1 kg (2lbs) lamb ribs
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 tbsp chopped parsley
  • 2 tsp chopped rosemary
  • 1 tbsp dried mixed herbs
  • 1 tsp smoked paprika
  • ½ tsp chilli flakes
  • 2 tsp salt
  • 1 tsp pepper

Directions

  1. Finely chop the herbs and garlic then place in a bowl. Add the oil, lemon juice, dried herbs, smoked paprika and chilli flakes then season generously with salt and pepper.
  2. Place the lamb ribs in a dish suitable for marinating then pour over the marinade. Cover and allow to marinate for at least 1 hour but up to 24 hours in the fridge. 
  3. Grill the ribs over medium-hot heat for 20-30 minutes. It’s important to allow the fat to render out to give you the juiciest end result possible.
  4. Once the ribs are cooked, remove from the heat and allow to rest for 5 minutes then serve with grilled lemons. 

Sweet and spicey Chicken Braai

Ingredients:

  • 4 boneless skinless chicken breast, or 8 boneless thighs
  • 2 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 2 Tbsp soy sauce
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp sriracha sauce
  • 1/4 cup sweet thai chili sauce
  • 2 Tbsp honey
  • 1 lime (optional)
  • 2 green onions (for garnish)

Directions:

  1. Combine garlic, ginger, soy sauce, apple cider vinegar, sriracha sauce, chili sauce, and honey in a medium bowl. I doubled the recipe because I was cooking for a crowd!
  2. Fillet the chicken if you are using breasts – or, you can place them (one by one) in a large ziplock bag and pound them flat using a rolling pin or mallet. This makes them cook a little faster on the grill, which helps when grilling with a sweet sauce that can char.
  3. Place the chicken in a large glass casserole dish (or in a large ziplock bag) and pour 3/4 of the sauce over the top. Reserve 1/4 for brushing on the chicken at the end. 
  4. Cover the chicken and refrigerate for 2-3 hours or up to 6 hours.
  5. When it’s time to grill the chicken, oil the grill and place the chicken breasts on the grill and cook on medium heat until they are cooked through. It’s takes around 15-20 minutes, being sure to flip them!
  6. When the chicken is nearly done cooking,  brush the reserved sauce over them.
  7. Top with green onions and a squeeze of lime and serve!

Sauce

  • 3 Tbsp Tomato Sauce
  • 2 Tsp Chilli paste – gochujang
  • ¼ Cup honey
  • rice wine vinegar 
  • ¼ cup brown sugar
  • 2 Tbsp Soy sauce
  • 2  Tbsp minced garlic
  • 1 Tbsp sesame oil

Directions

  1. First, you need to impart as much flavor into the wings as possible. The tasty gochujang (Korean red chili pepper paste) based marinade does the job wonderfully, and in only an hour if that’s all the time you have. You can also let the wings marinate overnight if you are prepping them ahead of time. 
  2. When you are ready to cook, fire up that grill. The grilling process is pretty basic, cooking the wings up until they are nice and crispy.
  3. Note that I do include instructions in the recipes notes in you prefer to baked these in the oven. They come out just as good!
  4. The marinade that you left the wings in doubles as the sauce! You need to make sure that you boil it down a bit until it thickens slightly.
  5. This gives it the right texture, and also gets rid of any bacteria the sauce may have picked up from the chicken. 
  6. When the wings are all crispy, you give them a final brush of the sauce before garnishing them with sesame seeds and sliced green onion. Be prepared to get messy!

A classic snoek braai recipe

Ingredients

  • 2 cloves Garlic
  • 1 Lemon, Zest and juice of
  • 125 ml Apricot jam, smooth
  • 2 tsp Cape malay curry powder
  • 1 Salt and black pepper, Coarse
  • 1 Olive oil
  • 150 g Butter
  • 1 Splash White wine
  • 1 Whole snoek, filleted

Directions

  1.  Sprinkle the snoek with salt and leave for 20–30 minutes. Rinse off and pat dry.
  2. Cook the butter and garlic until the butter is foamy. Add apricot jam, lemon zest, curry powder and wine. Stir through. Add a squeeze of lemon juice and pepper.
  3. Coat the snoek in oil so it won’t stick to the grid. Braai for about 15 minutes, basting with the apricot butter and turning frequently. Serve with leftover apricot butter.

This watermelon braai salad with feta is a little different for this summers braai.

Ingredients

  • 1 scallion
  • 3 tbsp. olive oil
  • 2 tbsp. champagne vinegar
  • 1/2 tsp. ground sumac
  • Kosher salt and pepper
  • 3 lb. watermelon, rind removed and cut into large triangular chunks
  • 3 Persian cucumbers, smashed and then cut into 1/2-in. pieces
  • 6 oz. feta cheese, crumbled
  • 1/3 c. whole-milk yogurt
  • 1/4 c. small fresh mint leaves
  • Flaky sea salt, for serving

Directions

  1. Finely chop white and light green parts of scallion; thinly slice dark green part and set aside. In a large bowl, whisk together oil, vinegar, sumac, chopped scallion and 1/2 teaspoon each salt and pepper.
  2. Add watermelon and cucumbers and gently toss to combine. Cover and refrigerate 10 minutes.
  3. Meanwhile, in a mini food processor, puree feta and yogurt until smooth. Spread onto serving platter.
  4. Remove watermelon and cucumbers from marinade and arrange on top of sauce.
  5. Spoon 3 tablespoons of the marinade over top, then sprinkle with mint, sliced scallion and sea salt.

Ingredients

  • 1 can Chickpeas
  • 5 Romain Hearts
  • cubed toasted Bread
  • 1 tsp Cumin Powder 
  • 3 tbsp Oil
  • 1 chopped Cucumber
  • 1 cup halved Cherry Tomatoes
  • 2 tbsp chopped Capers
  • Salt and Pepper

For dressing

  • 1/4 c. olive oil
  • 1 tsp. grated lemon zest plus 1/3 cup lemon juice
  • 1/4 c. tahini
  • 1 tbsp. nutritional yeast
  • 1 tbsp. Dijon mustard
  • 2 tsp. capers plus 1 tsp caper brine
  • 1 small clove garlic, finely grated
  • Kosher salt and pepper

Directions

Make the Crispy Chickpeas:

  1. Heat oven to 220°c. Rinse chickpeas; pat very dry with paper towels, discarding any loose skins.
  2. On a rimmed baking sheet, toss chickpeas with olive oil and 1/4 teaspoon each salt and pepper. Roast, shaking occasionally, until crisp, 30 to 40 minutes.
  3. Remove from oven and transfer to a bowl and toss with lemon zest. Chickpeas will continue to crisp as they cool.

Make the Dressing and Salad:

  1. Heat grill to medium.
  2. Make dressing: In a mini blender or food processor, puree all dressing ingredients, until smooth, adding 1 tablespoon water at a time to adjust consistency and seasoning with salt and pepper to taste.
  3. Set dressing aside.
  4.  Brush bread with 1 1/2 tablespoons oil. Brush onion slices with 1 tablespoon oil and season with 1/4 teaspoon each salt and pepper.
  5. Toss tomato and cucumber with remaining 1/2 tablespoon oil and season with a pinch of salt.
  6. Grill bread until toasty, 2 to 3 minutes per side; immediately rub with garlic. Grill onions until tender, about 5 minutes per side for onions
  7. Tear bread into pieces and separate onion rings.
  8. Toss lettuce with half the dressing to coat. Gently fold in grilled croutons and onion rings.
  9. top with tomatoe and cucumber, crispy chickpeas, and remaining dressing for drizzling or dipping.

Ingredients

  • 450g. macaroni pasta
  • 2 tbsp. olive oil
  • 2 TBSP Red wine Vinergar
  • 1 red onion, sliced

Ingredients

  • 4  large eggs
  • 1/3 c. plus 1 Tbsp olive oil, divided
  • 2 large boneless, skinless chicken breasts (1 lb total)
  • Kosher salt and pepper
  • 2 tbsp. sherry vinegar
  • 2 tsp. Dijon mustard
  • 1 tsp. sugar
  • 8 c. torn lettuce leaves or greens
  • 1 lb. tomatoes (of mixed sizes, such as Campari, grape and cherry, and mixed colors), halved or cut into wedges
  • 1 avocado, sliced
  • 1/2 small red onion, thinly sliced
  • 4 slices bacon, cooked and broken into pieces
  • Crumbled blue cheese and toasted sandwich bread, for serving

Directions

  1. Heat oven to 400°F. Bring a small pot of water to a boil. Add eggs and cook 7 minutes. Transfer to a bowl of cold water to cool; peel and set aside.
  2. Heat 1 tablespoon oil in medium oven-safe skillet on medium-high. Season chicken with 1/2 teaspoon each salt and pepper and cook until browned, 2 to 3 minutes. Flip chicken over, cook 1 minute more, then transfer skillet to oven and roast chicken until cooked through, 5 to 7 minutes. Transfer chicken to a cutting board and let sit at least 5 minutes before slicing.
  3. Meanwhile, in a small bowl, whisk together vinegar, mustard, sugar and 1/2 teaspoon each salt and pepper. Gradually whisk in remaining 1/3 cup oil.
  4. Halve eggs. Arrange lettuce, tomatoes, avocado, onion, bacon, eggs and chicken on a platter. Serve with vinaigrette, and blue cheese and toast if desired.

  • 3 tbsp. fresh lemon juice 
  • 3 tbsp. olive oil, divided
  • 1 medium shallot, finely chopped
  • 8 oz. cherry tomatoes, halved
  • 8 oz. green beans, trimmed and thinly sliced on a bias
  • 1 lb. zucchini (about 3 medium), halved lengthwise
  • 4 medium ears corn, husked
  • 1/2 c. torn basil leaves

Directions

  1. Heat grill to medium-high.
  2. In large bowl, whisk together lemon juice, 2½ tablespoons oil and 1/2 teaspoon each salt and pepper; stir in shallot. Fold in tomatoes and beans. Let marinate while grilling vegetables.
  3. In medium bowl, toss zucchini with remaining 1/2 tablespoon oil and 1/2 teaspoon salt. Place corn and zucchini, cut sides down, on hot grill. Cover and grill zucchini until grill marks appear, 3 to 4 minutes, then flip and cook 1 minute more. Grill corn until lightly charred and cooked through, turning occasionally, 10 to 12 minutes. Transfer vegetables to cutting board as they finish cooking.
  4. When cool enough to handle, cut zucchini in half lengthwise, then chop into 1/2-inch pieces. Cut corn kernels from cobs (you should have about 2 cups). Add zucchini and corn kernels to bowl with tomatoes and toss to combine, then fold in basil. Serve at room temperature or chilled.
