Ingredients

FOR THE PASTA SALAD

  • 600g. elbow pasta, cooked
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1/2 c. 
  • black olives, sliced
  • 1 medium carrot, shredded
  • Freshly chopped parsley, for garnish 

FOR THE DRESSING

  • 1 c. mayonnaise
  • 2 tbsp. red wine vinegar
  • 1 tsp. granulated sugar
  • Kosher salt
  • Freshly ground black pepper

DIRECTIONS

  1. In a large bowl, combine elbows, celery, bell pepper, olives, and carrots.
  2. Make dressing: In a medium bowl, combine mayonnaise, vinegar, and sugar. Season with salt and pepper and stir until combined.
  3. Pour dressing over pasta mixture and toss. Garnish with parsley before serving.

  • kosher salt
  • 1 lb. farfalle
  • 1/4 c. extra-virgin olive oil
  • 3 tbsp. red wine vinegar
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1 large cucumber, chopped
  • 1 c. cherry tomatoes, halved
  • 1/3 c. Kalamata olives, pitted and chopped
  • 1/2 red onion, chopped
  • Freshly ground black pepper
  • 2 tbsp. dill, finely chopped
  • 1/2 c. crumbled feta

DIRECTIONS

  1. In a large pot of salted boiling water, cook farfalle according to package directions until al dente. Drain and transfer to a large serving bowl.
  2. Make dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano and garlic powder.
  3. To serving bowl add cucumbers, tomatoes, olives and onions. Add dressing and toss until evenly coated. Season with salt and pepper and add dill, then top with feta.

  • 600g orecchiette pasta (or spiral/shell pasta)
  • 1/4 c. extra-virgin olive oil
  • 1 tbsp. balsamic vinegar
  • kosher salt
  • Freshly ground black pepper
  • 1 clove garlic, minced
  • 1 pt. cherry tomatoes, preferably multi-colored, halved
  • 1/4 c. torn basil, for garnish

Directions

  1. In a large pot of salted boiling water, cook orecchiette according to package directions until al dente. Drain and set aside.
  2. In a small bowl, whisk together olive oil and balsamic vinegar, then season with salt and pepper.
  3. To bowl, add pasta, garlic and tomatoes; toss with dressing to combine.
  4. Garnish with basil and serve.

  • 500g. fusilli pasta
  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 tsp. garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil
  • 4 slices bacon, cooked and crumbled
  • 2 c. halved grape tomatoes
  • 2 c. spinach, packed
  • 1/2 c. crumbled feta
  • 1/4 red onion, thinly sliced
  • 2 tbsp. freshly chopped dill

FOR DRESSING

  • 1/4 c. extra-virgin olive oil
  • 3 tbsp. red wine vinegar
  • 1/2 tsp. Italian seasoning
  • 1 clove garlic, minced
  • 1 tbsp. dijon mustard
  • Kosher salt
  • Freshly ground black pepper

Directions

  1. In a large pot of salted boiling water, cook fusilli according to package directions until al dente. Drain and transfer to large bowl. 
  2. Season chicken breasts with garlic powder, salt, and pepper. In a large skillet over medium heat, heat oil. Cook chicken until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then cut into 1″ pieces.
  3. Meanwhile, make dressing: In a medium bowl, whisk together oil, vinegar, Italian seasoning, garlic, and mustard. Season with salt and pepper.
  4. In the large bowl with the pasta, toss together all remaining ingredients. Pour dressing over salad, toss until coated, and serve.

  • 1 tsp. ground cumin
  • ½ tsp. ground turmeric
  • ½ tsp. crushed red pepper flakes
  • 7 Tbsp. extra-virgin olive oil, divided
  • 6 garlic cloves, lightly crushed
  • 4 skinless, boneless chicken thighs, cut into (¾”) pieces

  • 2 Tbsp. fresh lime juice

Directions

  1. Mix coriander, cumin, termeric, and red pepper flakes in a small bowl; set aside. Heat 2 Tbsp. oil in a large nonstick skillet over medium.
  2. Add garlic and cook, tossing occasionally, until golden brown all over, about 5 minutes. Increase heat to medium-high.
  3. Season chicken with kosher salt and add to skillet. Cook, tossing occasionally, until chicken is golden brown and nearly cooked through, about 3 minutes.
  4. Remove from heat and sprinkle reserved spice mix over. Toss several times to coat and let chicken sit in skillet until cooked through, about 1 minute longer. Transfer to a plate and let cool slightly.
  5. Whisk lime juice and remaining 5 Tbsp. oil in a small bowl; season dressing with kosher salt.
  6. Arrange lettuce, chicken, avocado, mango, onion, and tomatoes on a platter. Drizzle with dressing. Sprinkle with sea salt and red pepper flakes and scatter herbs over.

  • 1 c. frozen corn, thawed
  • 1 avocado, diced

Ingredients

  • 500g Persian cucumbers
  • Kosher salt
  • 2 tbsp sesame oil
  • 1 tbsp. sesame seeds
  • 1 tbsp. low-sodium soy sauce
  • 1/2 tbsp. lemon juice
  • 1 tsp. grated peeled fresh ginger
  • 1/2 tsp. honey
  • 1/3 c. cilantro, roughly chopped
  • Chili oil, for serving

Directions

  1. Halve each cucumber lengthwise and, with side of chef’s knife, bash it slightly to crush, then cut each half into 4 to 6 chunks. Transfer cucumbers to bowl and toss with 2 tsp salt. Let sit 10 minutes.
  2. Meanwhile, in large bowl, whisk together sesame oil, sesame seeds, soy sauce, lemon juice, ginger, and honey.
  3. Transfer cucumbers to colander and rinse, then shake off as much water as possible. Add to bowl with dressing and toss to combine, then toss with cilantro. Serve drizzled with chili oil if desired.

  • 2 kg baking potatoes
  • 2 1/2 teaspoons salt, divided
  • 1 cup mayonnaise
  • 1 tablespoon spicy brown mustard
  • 3/4 teaspoon pepper
  • 3 hard-boiled eggs, grated

Braai Salad Directions

  1. Cook potatoes in boiling water to cover and salted with 1 teaspoon salt 40 minutes or until tender; drain and cool 10 to 15 minutes.
  2. Stir together mayonnaise, mustard, pepper, and remaining 1 1/2 teaspoons salt in a large bowl.
