Lemon Koeksisters with Zesty Lemon Syrup
This delightful dessert will leave you wanting more! Lemon Koeksisters are a South African treat that are made of sweet dough, deep fried, and then soaked in a zesty lemon syrup. The combination of the sweetness of the dough and the tartness of the lemon syrup make for an amazing combination of flavors that will have you coming back for more!
Ingredients:
- 3 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 cup butter
- 1/2 cup milk
- Oil for deep frying
- 1 cup sugar
- 1/2 cup water
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Directions:
- In a large bowl, combine the flour, sugar, baking powder, salt and ginger, and mix until combined.
- Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk to form a soft dough.
- On a lightly floured surface, knead the dough for about 5 minutes until it is smooth and elastic.
- Roll the dough out to about 1/4-inch thick and cut into strips about 3 inches long and 1 inch wide.
- In a deep-fryer or a large pot, heat the oil to 375°F. Fry the strips in batches until golden brown and crisp. Remove from the oil and drain on paper towels.
- In a medium saucepan, combine the sugar, water and lemon juice and bring to a boil over medium heat. Add the lemon zest and reduce the heat to a simmer. Simmer for 5 minutes.
- Add the fried koeksisters to the pan and simmer for 5 minutes, stirring occasionally. Remove from the heat and allow to cool.
- Serve the koeksisters with the zesty lemon syrup. Enjoy!
