Vegan Caesar Braai Salad

Vegan Caesar salad packs in all the creaminess of the classic, plus extra good-for-you ingredients, a perfect braai recipe for your vegan guests

Ingredients

For crispy chickpeas

  • 1  15-oz can chickpeas
  • 1 tbsp. olive oil
  • Kosher salt and pepper
  • 1/2 tsp. grated lemon zest

For dressing

  • 1/4 c. olive oil
  • 1 tsp. grated lemon zest plus 1/3 cup lemon juice
  • 1/4 c. tahini
  • 1 tbsp. nutritional yeast
  • 1 tbsp. Dijon mustard
  • 2 tsp. capers plus 1 tsp caper brine
  • 1 small clove garlic, finely grated
  • Kosher salt and pepper

For salad

  • 4 thick slices bread
  • 3 tbsp. 
  • olive oil
  • 2 small red onions, cut into thick rounds
  • Kosher salt and pepper
  • 2 bunches small radishes
  • 1 clove garlic, cut in half
  • 2 heads gem lettuce or romaine hearts, leaves separated

Directions

Make the Crispy Chickpeas:

  1. Heat oven to 425°F. Rinse chickpeas; pat very dry with paper towels, discarding any loose skins.
  2. On a rimmed baking sheet, toss chickpeas with olive oil and 1/4 teaspoon each salt and pepper. Roast, shaking occasionally, until crisp, 30 to 40 minutes.
  3. Remove from oven and transfer to a bowl and toss with lemon zest. Chickpeas will continue to crisp as they cool.

Make the Dressing and Salad:

  1. Heat grill to medium. Make dressing: In a mini blender or food processor, puree all dressing ingredients, until smooth, adding 1 tablespoon water at a time to adjust consistency and seasoning with salt and pepper to taste. Set dressing aside.
  2. Make salad: Brush bread with 1 1/2 tablespoons oil. Brush onion slices with 1 tablespoon oil and season with 1/4 teaspoon each salt and pepper.
  3. Toss radishes with remaining 1/2 tablespoon oil and season with a pinch of salt. Thread radishes onto small skewers.
  4. Grill bread until toasty, 2 to 3 minutes per side; immediately rub with garlic. Grill onions and radishes until tender, about 5 minutes per side for onions and 6 to 8 minutes for radishes.
  5. Tear bread into pieces and separate onion rings. Toss lettuce with half the dressing to coat.
  6. Gently fold in grilled croutons and onion rings. Serve with radish skewers, crispy chickpeas, and remaining dressing for drizzling or dipping.

Ingredients

  • 2 peaches, each cut into 8 wedges
  • 2 tbsp. 
  • plus 2 tsp olive oil
  • 1 tsp. grated lemon zest plus 1 1/2 Tbsp lemon juice
  • 1 tsp. honey
  • Kosher salt and pepper
  • 1/4 c. roasted almonds, chopped
  • 12 oz. fresh mozzarella
  • 1/4 c. fresh basil, torn, plus small leaves, for serving

Directions

  1. Heat grill to medium-high. Brush peaches with 2 teaspoons oil and grill until grill marks appear, about 1 minute per side. Transfer to plate and let cool slightly.
  2. In a small bowl, whisk together lemon juice, honey and 1/4 teaspoon each salt and pepper until honey has dissolved.
  3. Whisk in remaining 2 tablespoons oil; stir in lemon zest and almonds.
  4. Slice mozzarella, arrange on platter and top with peaches. Fold basil into almond mixture and spoon over peaches.
  5. Sprinkle with cracked pepper and small basil leaves if desired.

A Braai Salad recipe idea with a bit of Asian influence, the perfect salad to spice up any braai

Ingredients

  • 1 – 2 packets of 2-minute noodles
  • 5 cups finely shredded cabbage
  • ½ cup finely sliced sugar snap peas (optional)
  • 1/3 cup of flaked almonds, toasted
  • 1/3 cup sunflower seeds toasted
  • +-2Tbsp toasted sesame seeds
  • 6 spring onions finely sliced (white and pale green parts)

Dressing:

  • 2 Tbsp + 2 tsp soy sauce
  • ¼ cup red wine vinegar
  • 1/3 cup sunflower oil
  • 1 tsp sesame oil (optional)
  • ¼ cup runny honey
  • 1 x garlic clove, minced
  • 1 heaped tsp grated ginger
  • 1 – 2 tsp wasabi paste, or one red chilli finely sliced, or a ½ tsp dried chilli flakes (optional to add heat)

Directions

  • Cut up all the vegetables and mix together in a large bowl.
  • Heat the grill element of your oven and break up the noodles onto a baking sheet and toast for about 10 – 15 cm under the grill until golden brown.
  • Keep a close eye as they burn quickly and shake the pan a few times during the grilling process. Set aside.
  • Dry pan fry the seeds until they start to pop and turn golden brown. Remove from the pan to prevent carry-over cooking and set aside.
  • Put all the dressing ingredients into an empty jar and shake around.
  • Toss the dressing, seeds, noodles and nuts together and serve immediately.

Ingredients

  • 1 kg prepared bread dough 1 packet potato bake
  • 250 ml cream
  • fresh 250 ml milk
  • 1 garlic — cloves, finely chopped
  • 250 ml cheddar cheese — grated cheese

Directions

  1.  Preheat the oven to 180 °C. Grease a roasting pan with nonstick spray.
  2.  Set aside the bread dough to rise until doubled in volume.
  3.  Mix the remaining ingredients except the cheese.
  4. . Pour half the cream mixture into the prepared pan.
  5.  Knock down the dough, shape into palm-sized balls or a size of your choice and pack them in the cream mixture in the pan. Pour the rest of the cream mixture over the dough balls and sprinkle the cheese on top.
  6.  Set aside to rise until doubled in volume. Bake for 40-50 minutes or until done.
